Ingredients: 8 medium-sized red potatoes 1 tablespoon olive oil 8 tablespoons butter, sliced 1 cup sour cream 1 teaspoon salt 1 teaspoon pepper 1/4 teaspoon garlic powder 2 cups shredded mozzarella, divided 2 cups shredded cheddar cheese, divided 6 slices cooked bacon, crumbled Minced chives, optional garnish Instuctions: Preheat oven to 350°F.
