
Betty Louise Boe, 94, of International Falls, Minnesota, died on Thursday, December 2, 2021 at the Littlefork Care Center.
Betty was born August 27, 1927 to Albin and Mabel Solberg in Minneapolis, Minnesota.
She grew up in Cokato and Blackduck and moved to Minneapolis after high school where she met and married her husband, Elwyn Boe, on September 29, 1946 in Remer, Minnesota. They lived in Fergus Falls, St. Paul, and Grand Rapids before settling in International Falls, MN.
Betty co-managed Hardees in Virginia, MN in 1974-1976. She also worked at Woolco and was a night auditor at the Holiday Inn in International Falls.
Betty loved family gatherings and cooking dinners for them on Sundays and holidays. She also enjoyed baking Scandinavian favorites such as lefsa and a variety of Christmas cookies. Betty was very active in the Zion Lutheran Churches in Grand Rapids and International Falls. While living on Rainy Lake’s Jackfish Bay for fifty years, Betty enjoyed fishing, swimming, and other water activities. Some of her other interests included camping, snowmobiling, sewing, traveling, and visiting friends and family.
She was preceded in death by her parents, Albin and Mabel Solberg of Blackduck, MN; husband of 65 years, Elwyn Boe; sisters, Maxine Anderson of Blackduck, MN and Beverly Fillmore of Stillwater, MN.
Betty is survived by her sons, Darrel (Angel) Boe of International Falls, Marcus (Bonnie) Boe of International Falls, and Sheldon (Lana) Boe of International Falls; daughters, Diane Boe of International Falls, Judith Bradley of International Falls, and Cheryl (Brad) Morrison of Gillette, WY; grandchildren, Lucas (Susi) Boe, Eric (Megan) Boe, Savannah (Theordore) Blenkush, Sarah (James) Peterson, Shannon (Collin) Boe, Jenna (Victor) Boe, Tyler, (Krystina) Morrison, Andrew (Leah) Morrison, Dana (Nikolai) Akovenko, and Ben Morrison; brother, Loren (Joan) Solberg of Grand Rapids, MN; 18 great-grandchildren; and many nieces and nephews.
A memorial service will be held at a later date.
